Fruit Salad with Honey Lime Mint Dressing


Fruit salads can always be found in my refrigerator. It is one thing I like to put together on my day off, so it is easy during the busy week to grab some fruit on the go. It is great for packing in lunches or perfect for a healthy dessert. Depending on what the season has to offer or what looks best at the farmers market or grocery store you can always find a good variety of fruits. I find that having a big fruit salad in the fridge makes it easier to meet your daily fruit requirements. For a different spin I created this Honey Lime Mint Dressing to change up the flavors a bit. Try it out on your next fruit salad!

Two of my favorite flavors are limes and mint. You can bet I am a big Mojito fan! This Honey Lime Mint dressing goes great with most fruits but I especially like it paired with raspberries. If you do not want to make a big batch of fruit salad you can make the dressing and drizzle it over whatever fruits you have on hand. You can store the dressing in the fridge for one week and use it to drizzle over your individual fruit servings.

Fruit salads make for a great potluck dish. They are bright, vibrant and full of flavor, yet low in calories and packed with nutrition. Just 1 cup of this fruit salad provides only 80 calories and supplies 2.4 grams of fiber, 1662 IU of Vitamin A, and 327 mg of potassium.

Here I used a mixture of honeydew melon, cantaloupe, pineapple, raspberries and blueberries. If you are looking for a diabetic friendly fruit salad then a mix of berries and cantaloupe would be a good choice as they will have the lowest amount of carbohydrates per serving or simply lower the portion of this recipe to 1/2 cup.

I have made this dressing with both basil and mint. Either one tastes great in this recipe. So if you do not have fresh mint around basil is a good substitution.

Fruit Salad with Honey Lime Mint Dressing

Makes: 14 (1 cup) Servings

Prep Time: 5 to 15 min

Total Time: 5 to 15 min

*Depending on what fruits you decide to use.

Ingredients

  • 4 Cups Cantaloupe, Cubed (~1 medium melon)

  • 4 Cups Honeydew, Cubed (~1 medium melon)

  • 4 Cups Pineapple, Cubed

  • 1 Cup Raspberries

  • 1 Cup Blueberries

Dressing

  • 3 Tbsp Mint, Chopped

  • Zest of 1 Lime

  • 5 Tbsp Lime Juice (~4 limes)

  • 2 Tbsp Honey

Directions

  1. Cut up the melons and pineapple and place them in a large bowl. Mix together.

  2. Rinse the berries and let dry. Set aside.

  3. In a small bowl or Mason jar mix all the ingredients for the dressing.

  4. Add half of the dressing to the pineapple and melon mixture. Toss to combine.

  5. Add the berries on top of the fruit salad to avoid squishing them.

  6. Drizzle the remainder of the dressing on top of the fruit salad.

  7. Best served chilled.
