Chocolate Covered Dried Apricots


Looking for a healthy chocolate snack? Chocolate covered apricots are a great snack option to satisfy your chocolate cravings. Instead of reaching for a candy bar which can be packed with calories, salt and unhealthy fats try out this very simple chocolate snack recipe.

Dried apricots are packed with nutrients so this chocolate snack will give you more bang for your nutritional buck! A one-half cup serving of dried apricots supplies: 157 calories, 2.2 grams of protein, 4.7 grams of dietary fiber, 36 mg of calcium, 1.7 mg of iron, 21 mg of magnesium, 755 mg of potassium, 0.3 mg of zinc, 1.7 mg of niacin, 2343 IU of Vitamin A, and 2.8 mg of Vitamin E. Being in my third trimester of pregnancy this has been a great snack to help meet my increased nutrient needs and deliver on my chocolate cravings!

Chocolate Covered Dried Apricots

Ingredients

  • 2 Cups Dried Apricots

  • 100 g Dark Chocolate (~4 oz)

Directions

  1. Line a baking sheet with parchment paper.

  2. Place the chocolate in a microwave proof bowl. Microwave in 30 second intervals and stir after each interval until the chocolate is melted.

  3. Dip the apricots in the chocolate and place on the parchment paper.

  4. Allow to dry. Then place in a storage container.
