With my air conditioning broken, temperatures in the mid 90’s, and no one able to fix it until next week, not much cooking has been going on in my kitchen. I have been cooling off with this super simple smoothie and popsicle recipe, which makes for a refreshing way to get a serving of dairy and fruit into your meal plan. These cherry lime treats will hit the spot!
All you do is simply throw all the ingredients into a blender or food processor and serve over ice or pour into popsicle molds for later. I usually make a smoothie for myself and freeze the rest as popsicle's for my toddler to enjoy once frozen.
This recipe will make for 6 full size popsicle's or 2 (1 cup) smoothies. If you have not made your own popscile's before I highly recommend you give them a try. It is much cheaper and healthier than the ones you can find in the stores. Amazon sells an array of popsicle molds or you can find them in most stores this time of year. I have even used ice cube trays and stuck a popsicle stick in them prior to getting my own popsicle molds.
Store bought smoothies and popsicle's can be loaded with calories, sugar, dyes, and contain little to no fruits. This version is a healthier way to enjoy these food items. A one cup serving of the smoothie provides only: 117 calories, 5.7 grams of protein, 25 carbs (20 grams of carbohydrates if using a sugar substitute), 0 grams of fat, and 181 mg of calcium. A full size popsicle contains: 39 calories, 1.9 grams of protein, 8 grams of carbohydrates, 0 grams of fat and 60 mg of calcium.

Cherry Lime Smoothies & Popsicle's

Ingredients
1 Cup Ice
1 (6oz/170g) Container Non-fat Yogurt
1 Cup Pitted Cherries
Juice of 1 Lime
2 Tsp Sugar or sugar substitute
Directions
Place all ingredients into a food processor or blender and blend until smooth.
For a smoothie serve over ice and garnish with a fresh cherry and slice of lime. For the popsicle's pour into popsicle molds and place in the freezer. Allow up to 6 hours to freeze.
