Summer fruit is the best!! These fruit skewers make for a great summertime snack. Super easy to make and will brighten up your plate. The dipping sauce is made with yogurt giving you a good balance of healthy carbohydrates, fiber and protein making for a more satisfying snack that will keep you full.
Another great use for your cookie cutters is using them to make fun fruit shapes! Make sure to cut the watermelon to about the width of your cookie cutters. You do not want your shapes too thin or they will be hard to get onto the skewer.
Give your fruit salad or skewers a little extra touch that will be sure to win over a crowd! This method of cutting fruit also is a fun way to get your little ones helping out in the kitchen. My toddler loves to help me make these and entices him to also try out new foods.

You can use any plain yogurt to make this but I find that having a little fat in the yogurt gives it a creaminess you miss in the fat free versions.

Fruit Kebabs with Honey Mint Yogurt Dipping Sauce

Makes about 10 Fruit Skewers

Ingredients
½ Small Watermelon
15 Grapes
1 pint Blueberries
1 Pineapple, cut into 1 inch pieces
½ Small Melon, Cut into 1 inch pieces
~ 10 Skewers for serving
Dipping Sauce
1 (6 oz) Container Plain 2% Yogurt
1 Tsp Fresh Mint, Finely Chopped
2 Tsp Honey
Directions
If using cookie cutters slice the watermelon to the width of your cookie cutter, about ½ to 3/4th inch, see above photos and notes. Cut the pineapple into 1 inch pieces. Cut the melon into 1 inch pieces or use a melon baller.
Place fruit onto the skewers.
To make the dip add the chopped mint and honey to the yogurt and stir to combine.
Serve alongside the fruit skewers and enjoy! Best served chilled.

Low Potassium Diet Notes:

Or decrease the serving size to 1 fruit skewer (~1/2 cup fruit) and 1 Tbsp dipping sauce which will lower potassium to 150 mg per serving.
